A traditional Italian cured meat made from pork jowl (cheek), offering a rich, flavour. Air-dried andseasoned with salt, black pepper, and herbs, Guanciale provides a deeper, more refined pork taste than pancetta or bacon.
Dice and render slowly for pasta dishes such as carbonara, amatriciana, and gricia. Also excellent thinly sliced for antipasti or added to vegetables and sauces.
